As regular readers will know, I've been on a bit of a healthy-eating streak lately! It may seem to have come out of left field, but the truth is that being able to prepare healthy meals is a vital part of being able to enjoy the outdoors. If you can pack something nice to bring with you on your next trek, it will give you something to look forward to when your legs are aching and your stomach is growling. I find that being able to bring something that I've made myself, rather than having grabbed it off a shelf, always makes it taste that little bit better.

Curried Chicken Salad Sandwich from Valerie's Kitchen

This is one simple meal which I sometimes prepare when I wake up late. Extremely easy and simple to cook, it is starting to become my staple dish. To cook this meal you need:

Curry Dressing Ingredients:

  • 4 teaspoons curry powder
  • 2 teaspoons sugar
  • 1/2 teaspoon salt
  • Black pepper, to taste
  • 1/2 cup mayonnaise
  • 1/2 up plain Greek yogurt

Chicken Salad Ingredients:

  • 1 stalk celery (sliced)
  • 1/4 cup red onion (diced)
  • 2 tablespoons fresh Italian parsley
  • 2-2.5 cups cooked, chopped chicken (use rotisserie chicken to keep things simple)
  • 1/3 cup golden raisins or halved grapes

Mix chicken, raisins, celery, and onion in a medium sized bowl. In another bowl, combine all the dressing ingredients. Pour the created dressing over chicken mixture and stir all the ingredients gently. Sprinkle some parsley and mix again. Now, you are ready to serve the created mixture on sandwich rolls.
