I used to be a criminal snacker, always giving in to the temptation to grab something from the local corner shop rather than preparing lunches of my own to keep me going throughout my day. But with my weight beginning to rise almost as quickly as the price of my daily Freddo, I started to realise that this was not the way to go. I've finally come to acknowledge that preparing a good cooked lunch beforehand can not only provide plentiful health benefits, but it's also the cheaper option as well! In that spirit, here's another healthy lunch recipe to try out for yourself.

Sweet Potato-Peanut Bisque

This dish provides me respite on a cold and freezing day. To cook this meal you need:

  • 3 cups tomato juice
  • 1 can (4 oz) diced green chiles (drained)
  • 2 teaspoons minced ginger
  • 1 teaspoon allspice
  • 1 can (15 oz) vegetable broth
  • 1/2 cup natural peanut butter
  • Pepper
  • 2 large sweet potatoes
  • 1 tablespoon canola oil
  • 1 small yellow onion (chopped)
  • 1 large clove garlic (minced)

Prick sweet potatoes with fork and then microwave them on high for 7-10 minutes. Use a saucepan for heating some oil. Cook onion for 2 to 4 minutes and then add garlic and cook for one more minute. Add some tomato juice, green chiles, allspice, and ginger while stirring the mix. Cook for 10 minutes.

In the meantime, peel microwaved sweet potatoes and chop them into small bite able pieces. Add half of chopped potatoes to the saucepan. Put the remaining half in a blender along with vegetable broth and peanut butter. Puree until the blended mixture is smooth and then add to saucepan. Stir well to combine, and if the created mixture is too thick, you can thin it with water. Serve it while it is hot and beat the cold with this sumptuous lunch.
